Jim Baron is a lifelong surfer and, with wife Liz, owner of five Dallas-Fort Worth area Blue Mesa Grills. The Dirty Margarita was born when Jim tasted a similar drink in Santa Cruz while on one of his frequent surfing vacations. He returned to Dallas and experimented until he had created his version of the drink. The result is the Dirty Margarita.

"The secret comes from the flavor of caramelized simple sugar," says Baron. The “dirty” part of the name refers to its cloudy appearance.

Blue Mesa Grill's Dirty Margarita

Serves 1

Glassware: 14 oz. blue rimmed martini glass

Ingredients:
2 oz Herradura Reposado
2 oz caramelized simple syrup
2 oz Sweet and Sour
˝ oz of house brandy
˝ lime
lime wheel

Combine ingredients over ice in a shaker. Shake until very cold and strain into a 14-ounce martini glass filled with ice, salt or no salt; garnish with lime wedge.

Caramelized simple syrup: Melt 2 cups sugar in deep saucepan and stir until dark brown. Immediately remove from heat and stir in 1/2 cup boiling water. Sugar will foam and steam; take care not to get burned. Once sugar is dissolved, stir in 1/2 cup cool water. Place in a bottle outfitted with a pour spout and keep cool until ready to use. Should last up to two weeks in refrigerator.
