Getting Lit in South Beach

At Wish, the South Beach restaurant located in The Hotel, patrons are enjoying the latest cocktail craze—glowing neon drinks. Electronic cocktails, brightly lit with colored ice cubes are the hot new thing on the bar scene, according to Wish co-owner Jessica Goldman Srebnick.

The neon cubes were discovered by the restaurant’s beverage director Jay Wolmer, and introduced at Trust, the new Philadelphia restaurant, when it opened in late February. They were a huge hit.

Recently, Wish became the first restaurant in South Beach to debut electronic cocktails, with an expanded menu of eight concoctions. Among the choices: the Caribbean martini (Mount Gay rum, Counter and sweet and sour), the Passion Tini (Ketel One vodka, Alize passionfruit liqueur, cranberry and lime) and of course, the Sobe Tini (Grey Goose vodka, peach schnapps, cranberry and pineapple juice).

These cocktails come with molded plastic ice cubes equipped with a micro-battery that lights the cube red, white, blue, green, yellow or amber when it’s tapped against a hard surface.  The cubes contain a freezable gel that keeps the drinks cold. They last about 12 hours, longer than the average bar stay, so the ice cube can be tapped off and enjoyed at home later. For the price of a martini patrons get to take a cube home.
