Cool Caribbean-inspired Cocktails from Rhumbar


 

 
 


Even the names have a cool Caribbean vibe: Spanish Trampoline and Tatonga. These two new cocktails are created at Rhumbar, a new rum bar and patio at the Mirage on the Las Vegas Strip.

Spanish Trampoline

Winner of Food Network Challenge, 2005, this hand muddled cocktail has notes of sweet and tart lime and tangerine on the front and a deep, light, grassy bite of Sagatiba Cachaça on the body, with a mint and citrus finish.

1 oz    Guarapa
4         Lime cubes
10-12  Large mint leaves
1 ½ oz Sagatiba Chachaca
2 oz     Tangerine juice
Garnish with Edible flower

 

Tatonga

Based on a drink sailors used to mix in a barrel to fight scurvy and boredom, RHUMBAR’s version combines lush pineapple, sweet and tart lime, and notes of mango, clove, and cherry with a smooth finish of molasses and lime.

1 oz  Montecristo Spiced Rum
1 oz  Cruzan Mango
1 oz  Rhumbar fresh daiquiri mix
2 oz  Pineapple juice
2      Dashes Angostura Bitters

Garnish with two pineapple spears, orchid
