Rebecca Hing, Director of Marketing at the Scottsdale Resort and Athletic Club, where the Eurasia Bistro is located, explains how she created this intriguing Asian variation of the martini: “I thought about creating a signature cocktail that reflected the Asian fusion cuisine offered in our property's restaurant, the Eurasia Bistro. Both of my parents are Chinese, and many of my mother's recipes are offered in the restaurant. As most Chinese chefs do, they use ginger as an added spice to dishes, but it's also used as a healing property and antioxidant.

“I’m a big fan of ‘bar chefs,’ having resided many years in New York City and frequented bar establishments where house-infused vodkas are used as well as ingredients that are normally used in food dishes. About two years ago, after several experiments in our restaurant kitchen, I arrived upon the combination of citrus and ginger, which produced a clean, yet spicy flavor with a kick that was distinctive and delicious. I first served the Ginger Citritini at a media event in New York to promote our property. My table was a big hit, and since then it's been our signature cocktail.”

 

Ginger Citritini

2 parts premium citrus vodka
1 part Cointreau
2 parts lemonade (fresh if possible)
½ part Rose’s lime juice
1 teaspoon fresh grated ginger
1 squeeze fresh lime juice

For best results, infuse vodka for several days with 1/2 cup chopped ginger in airtight container. Mix vodka, juices, and grated ginger in a shaker over ice. Strain into martini glass and serve with lime twist as garnish.
