These four new cocktails from Pointe South Mountain Resort in Phoenix are waiting to be discovered by snow-averse travelers seeking an early spring. The Serendipity and heavenly are specialties of the resort’s Phantom Horse Grill and were inspired by the hot new liquor, X Rated. The fun, fruity color of the liquor was a perfect match for the bright colors of spring. The Pacifique, featured at Latitude 30, was inspired by the cocktail classic the Atlantique.

Serendipity

1 ounce X-Rated Fusion Liqueur
1 ounce Ketel One Vodka
Splash Cointreau
Splash Cranberry juice
1 squeeze Lime wedge

Ingredients are shaken and served over ice with a lime garnish.

Heavenly

1 ounce X-Rated Fusion Liqueur
1 ounce Malibu Coconut Rum
1 ounce Peach Schnapps
Splash Pineapple juice

Shake over ice and serve in a martini glass. Garnish with fresh strawberry and add a floater of Chambord

Pacifique

1 1/2 ounce Vodka, regular or citrus
1/2 ounce Chambord
1/2 ounce Rose's Lime Juice
1/4 ounce Peach Schnapps
Splash Sour Mix
Splash 7-Up

Shake ingredients with ice and strain into chilled martini glass. Garnish with peach or orange slice.

Love Potion No. 9

1 1/2 ounce Stolichnaya Vanilla Vodka
Splash Stolichnaya Strawberry Vodka
1/2 ounce Godiva White Chocolate Liquor
1/2 ounce White Crème de Cocoa
1/2 ounce Bailey's
Splash Cream

Shake over ice and serve in martini glass, garnish with a chocolate covered strawberry.
