Summer Caipirinhas

Cachaca is a Brazilian spirit distilled from sugar cane juice. It is the third most consumed spirit in the world behind only vodka and soju/shochu, the Asian distillates made predominantly from rice. Historians date the initial creation of Cachaca between 1532 and 1550 in Brazil. Unlike rum, which is usually made from molasses, Cachaca can only be made from fresh cane juice, and can only be made in Brazil.

The Leblon Caipirinha

2 oz. Leblon Cachaca
1/2 Lime
2 tsp superfine sugar or 1 oz simple syrup (for a "skinny" version substitute 1 packet Splenda or Equal)

Cut the lime into four wedges, add sugar and muddle in a shaker. Fill the shaker with ice and add Leblon Cachaca. Shake vigorously, pour into a rocks glass and garnish with a slice of lime.

Fruit Caipirinha

2 oz. Leblon Cachaca
1/4 Lime
4 chunks of fruit of your choice (kiwi is a colorful choice)
2 tsp superfine sugar or 1 oz simple syrup
(for a "skinny" version substitute 1 packet Splenda or Equal)

Cut the lime into a wedge, place at bottom of shaker with fresh fruit and sugar and muddle. Fill the shaker with ice and add Leblon Cachaca. Shake vigorously, pour into a rocks glass and garnish with a slice of fresh fruit. For a party, try putting out various fresh fruits and allowing guests to make their own caipirinha using their favorite flavors.
