Shake with ice; strain over ice in a rocks glass. Garnish with a lime wheel.

There are two ways to serve:

To make gastrique: 5 lbs tangerine juice, zest of 5 tangerines, 5 lbs chopped rhubarb, dry vermouth, champagne vinegar, cane sugar, Indonesian longpepper, grains of paradise, toasted coriander. Build in Collins glass. Top with soda water and ice. Garnish with lemon peel.
Don't mess with my Tu-Tu This cocktail is easy to make in batches, so the bartender will not be stuck behind the bar all night. 1/3 Bluecoat Gin Combine all ingredients in a shaker, filled with ice, shake until frothy, strain into a small wine glass, garnish with smoked fairy floss (cotton candy). |
