Trend: Bitters Create New Complex Profiles


 

 


As an alternative to the sweet concoctions that have traditionally dominated cocktail menus, bartenders are rediscovering the power of bitters to create complex flavor profiles. Cynar, Aperol, and Angostura are a few of the better-known bitters, but one of the most popular, and certainly the oldest, is the red Italian spirit Campari.

Created by Gaspare Campari in 1860, Campari is made from the infusion of herbs, aromatic plants and fruits in alcohol and water. Gaspare’s recipe remains a highly guarded secret, known only to the few people involved with the production process.

1.5 oz. SKYY Vodka
0.5 oz. Campari
0.5 oz. Luxardo
0.25 oz. honey
Pinch of sea salt
1 oz. Prosecco
2-3 cantaloupe chunks

Muddle cantaloupe chunks with honey and sea salt in a cocktail shaker. Add ice, SKYY Vodka, Campari and Luxardo and shake vigorously. Strain into a Collins glass with crushed ice. Top with Prosecco and Cantaloupe melon balls on a toothpick.

Cerveza Nicola
Served at Dish Osteria and Bar Pittsburgh

0.5 oz. Campari
0.5 oz SKYY Vodka
Top Peroni Beer

Pour Campari and SKYY Vodka over ice into a draft style glass and fill to the rim with Peroni. Garnish with an orange slice.

 

Zapatista

1.5 oz. Cabo Wabo Reposado Tequila
0.75 oz. Campari
0.75 oz. fresh grapefruit juice
0.25 oz. fresh lemon juice
1 tbsp. agave nectar
Fresh egg white
Pinch of Indonesian Pepper

Beginning with Agave Nectar and pepper, combine all ingredients in a cocktail shaker with ice. Shake vigorously and strain over fresh ice into tall glass. Garnish with long grapefruit peel.

 

Campari and Soda

1 oz. Campari
2 oz. club soda

Pour Campari over ice in a highball glass. Add club soda. Garnish with an orange slice.

 

Campari and Orange

1 oz. Campari
2 oz. orange juice

Pour Campari over ice in a highball glass. Add orange juice. Garnish with an orange slice.
 

 

Negroni Sbagliato

0.75 oz. Campari
0.75 oz. Cinzano Rosso Vermouth
Top pinot chardonnay

Pour all the ingredients into a tumbler with some ice. Shake and then pour into a rocks glass. Garnish with an orange slice.
