The Spirits of Two Chefs:
A Treasure Trove Ten Years in the Making

Two Chefs, the elegant landmark restaurant in the heart of South Miami boasts a spirits menu sure to captivate even
the most experienced aficionados.


 

 
 


“Our cuisine is extremely spirits friendly,” says Jan Jorgensen, chef/owner of Two Chefs. “I started this spirits list to compliment my menu, but it soon grew into a passion.”

Nearly ten years and $50,000 later, the bar features more than 400 different spirits.  The collection consists of a wide variety of moderate to extremely high-end and difficult to attain products, including vodkas, gins, rums, tequilas and whiskeys.

In the spirits menu, bound in beautiful leather like a wine menu, patrons will find close to 70 vodkas, such as Stolichnaya Elit and the newest flavored varieties; sixteen gins, including Kensington X.O. Reserve; 38 rums and 20 tequilas, including Herradura Seleccion Suprema Anejo. Digestif drinkers will be pleased with the selection of fine Armagnacs, brandy de jerezes, Calvados, cognacs–among them the matchelss Remy Martin Louis XIII—grappas, ports and sherries.

Jorgensen’s true passion, though, lies in his whiskey selection, which contains 175 varieties. Inspired when he began selecting single malts, his fascination grew as he learned more about the spirit’s history and preparation. Soon, the chef-turned-Scotch-aficionado began adding blended malts, special reserves and 12-, 15- and 18-year varieties to his collection. Some of the most notable selections include Macallan’s Anniversary Malt, as well as their 1841 and 1861 replicas, The Balvenie 30 Year, Dalmore 30 Year Limited Edition and Chieftans Springbank 35 Year, one of only 498 bottles in the world.

Determined to stock his bar with some of the world’s most exclusive bottles, and having already built an impressive list, Jorgensen now enjoys making one truly exceptional purchase each month. His next big acquisition? The recently released Auchentoshan 1961, one of only 202 bottles.

“As much as this list is for my enjoyment, it is truly for my customers,” says Jorgensen. “Although it breaks my heart to open one of my rare bottles, what good is a bottle of 30-year Scotch if no one enjoys it?”

To celebrate his collection, Jorgensen, known for his award-winning European-inspired comfort food and his love of entertaining, is hosting a special series of spirits tastings, complimented by his cuisine. Also known for his cooking classes, which he conducts in the restaurant’s wine room and private kitchen, he will offer a spirits-themed cooking class to enlighten home culinaires about cooking with vodkas, rums, cognacs and whiskeys.
