No added water: this drink takes its dilution from the ice in the glass. Chill the batch and build each glass over ice.

Use a 2 liter pitcher, or split it between two 1 liter bottles.

Egg and cream don’t keep in a batch: add them per drink and shake to order.

Why it works

Pineapple juice and coconut cream bring sweetness and body, so no sugar is needed. Lime keeps the drink from tasting heavy, and mint adds fresh aroma. Building it in the glass and stirring well mixes the coconut cream evenly. Clap the mint between your palms before adding it; that releases its oils without the bitterness of heavy muddling.

Substitutions

  • Coconut milk is lighter than coconut cream.
  • A splash of soda lightens it.
  • Aged rum adds depth.

Questions

Coconut cream or cream of coconut?
Coconut cream is unsweetened; cream of coconut is sweet. If using cream of coconut, reduce or skip other sweeteners.
Should it be shaken?
It is built here; shaking gives a frothier texture.
