16 oz · 480 mlGin
8 oz · 240 mlLime Juice
4 oz · 120 mlRaspberry Syrup
7 oz · 210 mlCold water, for dilution (approx.)

The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Use a 2 liter pitcher, or split it between two 1 liter bottles.

Add at serving: top each glass with soda water. Bubbles go flat in a batch, so they stay out of it.

Why it works

A Rickey is spirit, lime and soda, usually with little or no sugar. Here raspberry syrup adds fruit and gentle sweetness, a full ounce of lime keeps it tart, and gin gives the base. Shaking blends and chills the base; topping with soda lightens it.

Substitutions

  • Muddle a few fresh raspberries with simple syrup in place of raspberry syrup.
  • Vodka gives a cleaner drink.
  • Reduce the syrup for a drier, more traditional Rickey.
