AmountIngredient
16 oz · 480 mlGin
8 oz · 240 mlPear Nectar
4 oz · 120 mlLemon Juice
2 oz · 60 mlGinger Syrup
7½ oz · 225 mlCold water, for dilution (approx.)

The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Use a 2 liter pitcher, or split it between two 1 liter bottles.

Add at serving: top each glass with soda water. Bubbles go flat in a batch, so they stay out of it.

Why it works

Pear nectar adds body and soft fruit, and ginger syrup adds warmth and spice. Lemon keeps it tart. Shaking the base with ice blends the nectar evenly, and soda on top lightens a fuller drink. The pear slice garnish adds aroma.

Substitutions

  • Make ginger syrup by simmering sliced ginger in simple syrup for 15 minutes.
  • Apple juice works in place of pear nectar.
  • Bourbon in place of gin gives a warmer drink.
