  1. Fill a wine glass with ice.
  2. Add the prosecco, then the Aperol, then a splash of soda water.
  3. Stir gently and garnish with an orange slice.

No added water: this drink takes its dilution from the ice in the glass. Chill the batch and build each glass over ice.

Fits one 750 ml bottle; a funnel helps.

Add at serving: 3 oz prosecco per glass; a splash soda water per glass. Bubbles go flat in a batch, so they stay out of it.

Why it works

The spritz works because it is mostly wine and bubbles: prosecco brings dryness and fizz, Aperol brings a bitter-orange sweetness, and a splash of soda lightens it further. Building it over plenty of ice in a wide wine glass keeps it cold and lets the aroma open up. Adding the prosecco first helps the Aperol mix in without heavy stirring.

Substitutions

  • Any dry prosecco works; brut keeps the drink from turning sweet.
  • Campari in place of Aperol makes a more bitter, deeper red spritz.
  • Out of prosecco? A dry sparkling white wine works the same way.
