Zero-Proof Drinks
Drinks with no alcohol, made with the same care as the rest of the library: measured specs, fresh citrus, plenty of ice. Most start from a classic and leave the spirit out, so the build and the balance are already proven.
Building flavor without alcohol
Alcohol carries aroma, adds body and takes the edge off sugar. Without it, a drink can taste thin or sweet, so these recipes lean on three things instead.
- Fresh citrus. Squeezed the same day, lime and lemon give the brightness that keeps a zero-proof drink from tasting like soda. See fresh citrus juice.
- Bitterness and spice. Grapefruit, ginger, coffee and non-alcoholic aperitivos add the edge a spirit would. A pinch of salt rounds out bitterness.
- Cold and dilution. A full glass of ice keeps the drink cold and slows melting. See ice.
