  1. Pour the cold brew and syrup into a cocktail shaker.
  2. Shake very hard with ice for about 15 seconds.
  3. Strain into a chilled cocktail glass and garnish with 3 coffee beans.

The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Use a 2 liter pitcher, or split it between two 1 liter bottles.

Why it works

Cold-brew concentrate brings coffee flavor without the harsh bitterness of chilled espresso, and simple syrup takes the place of the coffee liqueur’s sweetness. With no vodka or liqueur, the drink is smaller, so a hard shake does more work: it chills the coffee and whips air into it for a light foam. Straining into a chilled glass keeps the foam on top.

Substitutions

  • Freshly pulled espresso, cooled slightly, gives a thicker foam than cold brew.
  • A non-alcoholic coffee liqueur alternative adds sweetness and body.
  • Demerara syrup gives a deeper, caramel note.
