  1. Fill a mule cup or rocks glass with ice.
  2. Add the ginger beer, then the lime juice.
  3. Stir gently and garnish with a lime slice.

No added water: this drink takes its dilution from the ice in the glass. Chill the batch and build each glass over ice.

Fits one 750 ml bottle; a funnel helps.

Add at serving: 5 oz ginger beer per glass. Bubbles go flat in a batch, so they stay out of it.

Why it works

A Moscow Mule gets its character from ginger beer, so leaving out the vodka keeps most of the flavor: heat, sweetness and fizz. A little more ginger beer fills the glass, and the lime cuts through the sweetness and keeps the finish clean. Built over plenty of ice and stirred once, it stays cold and bubbly. A spicy ginger beer gives it more bite.

Substitutions

  • Ginger ale makes a sweeter, milder drink.
  • Muddle a slice or two of fresh ginger in the glass for more heat.
  • A dash of non-alcoholic bitters adds depth.

Is ginger beer alcoholic?
Commercial ginger beer is a soft drink. Some craft or home-brewed versions contain alcohol, so check the label.
Does it need a copper mug?
No. A metal cup keeps it colder, but a rocks glass works.
