Lavender Lemonade batch
AmountIngredient
16 oz · 480 mlLavender Syrup
8 oz · 240 mlLemon Juice
6 oz · 180 mlCold water, for dilution (approx.)

The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Fits a 1 liter bottle or carafe.

Add at serving: top each glass with soda water. Bubbles go flat in a batch, so they stay out of it.

Why it works

Lavender syrup provides both the sweetness and the floral flavor, and lemon adds tartness. Two ounces of syrup to one of lemon makes it sweet-tart. Shaking blends and chills it, and topping with soda adds bubbles. With no spirit to carry it, the drink depends on a well-made syrup: steeped long enough to taste of lavender, strained before it turns soapy.

Substitutions

  • Make lavender syrup by steeping 1 tbsp culinary lavender in 1 cup hot simple syrup for 15 minutes.
  • Still water in place of soda makes a flat lemonade.
  • Honey syrup in place of some lavender syrup adds depth.
