8 oz · 240 mlGrapefruit Juice

The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Use a 2 liter pitcher, or split it between two 1 liter bottles.

Why it works

Grapefruit brings tartness and a light bitterness, basil adds a fresh, peppery-green aroma, and simple syrup balances both. Shaking the basil with ice bruises it just enough to release its oils, and double straining keeps the leaf pieces out of the glass. Vodka keeps the base clean so the herb and citrus lead.

Substitutions

  • Gin in place of vodka adds more herbal notes.
  • Pink grapefruit is sweeter than white.
  • Mint or Thai basil work instead of sweet basil.

Questions

Should the basil be muddled?
Not necessarily. Shaking it hard with ice releases enough flavor; muddling makes it stronger.
Why double strain?
A fine strainer catches basil bits and ice chips for a clean, smooth drink.
