The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Fits one 750 ml bottle; a funnel helps.

Egg and cream don’t keep in a batch: add them per drink and shake to order.

Why it works

A flip uses a whole egg, which when shaken hard gives a rich, creamy texture without dairy. Spiced rum adds vanilla and warm spice, and a little simple syrup sweetens it. Dry shake first to emulsify the egg, then shake again with ice to chill. Freshly grated nutmeg on top adds aroma.

Substitutions

  • Dark rum or brandy work in place of spiced rum.
  • Rich demerara syrup adds depth.
  • Use pasteurized eggs if raw egg is a concern.

Variations

  • Whiskey Sour: egg white instead of a whole egg.
  • Eggnog: the same idea with cream and milk, made in a batch.

Questions

Is a raw egg safe in a cocktail?
Use fresh eggs from a reliable source, or pasteurized eggs if that is a concern.
What is a dry shake?
Shaking without ice first, which whips the egg into a smooth, airy texture.
