No added water: this drink takes its dilution from the ice in the glass. Chill the batch and build each glass over ice.

Fits one 750 ml bottle; a funnel helps.

Why it works

Equal parts keeps the Negroni in balance: gin brings botanicals and backbone, Campari brings bitterness and color, and sweet vermouth brings body and a wine-like sweetness that rounds off the bitter edge. Built over ice and stirred gently, it chills and dilutes slowly in the glass, so the first sip is bold and the last is softer. The orange slice adds aroma.

Substitutions

  • Any London Dry gin works; a juniper-forward one stands up best to the Campari.
  • Swap the gin for bourbon or rye and serve it up for a Boulevardier.
  • A richer vermouth (vanilla-leaning) softens the bitterness; a drier one sharpens it.

Questions

Is a Negroni supposed to be bitter?
Yes. The bitterness comes from Campari and is the point of the drink. If it’s too much, a slightly richer sweet vermouth rounds it off without changing the build.
Should a Negroni be stirred or shaken?
Stirred. All three ingredients are spirits or fortified wine, so stirring keeps it clear and silky.
Can it be made ahead?
Yes. Equal parts batch well in a bottle kept in the fridge; pour over fresh ice to serve.
