8 oz · 240 mlLemon Juice
4 oz · 120 mlRosemary Syrup
7 oz · 210 mlCold water, for dilution (approx.)

The water stands in for the melt from shaking: about 25% for a shaken drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Use a 2 liter pitcher, or split it between two 1 liter bottles.

Add at serving: top each glass with soda water. Bubbles go flat in a batch, so they stay out of it.

Why it works

Rosemary syrup adds a piney, savory aroma that echoes the juniper in the gin. Lemon keeps the drink tart, and soda water lengthens it. Shaking the base chills it, and the rosemary sprig garnish puts the aroma right at the nose.

Substitutions

  • Make rosemary syrup by steeping two sprigs in hot simple syrup for 20 minutes.
  • Thyme works in place of rosemary.
  • A briefly smoked sprig adds a campfire note.

Variations

Questions

How strong should rosemary syrup be?
Taste after 20 minutes of steeping. Rosemary gets bitter if left too long.
Can it be made without syrup?
Shake a sprig with the drink and use simple syrup; the flavor will be lighter.
