Collins and Gin Fizz Variations
A Collins is a sour stretched long with soda water over ice: tall, cold and easy to drink on a hot afternoon. Fizzes are close cousins, usually shaken and topped with a little less soda. Once you’ve made the classic, swapping the plain syrup for one flavored with hibiscus, lavender or rosemary is the easiest way to make it your own.

Ingredients
- 45 ml (1½ oz) gin
- 30 ml (1 oz) fresh lemon juice
- 15 ml (½ oz) sugar syrup
- 60 ml (2 oz) soda water
Steps
- Pour the gin, lemon and syrup into a highball glass filled with ice.
- Top with the soda water and stir gently.
- Garnish with a lemon slice and a cocktail cherry.
