The water stands in for the melt from stirring: about 20% for a stirred drink. It is an approximation, so taste and adjust. Chill the batch at least 2 hours and pour over fresh ice.

Fits one 750 ml bottle; a funnel helps.

Why it works

Maple syrup replaces sugar, adding a toasty, woody sweetness that suits smoke. A smoked whiskey brings the campfire note, and Angostura adds spice to balance the maple. Use pure maple syrup: it is less sweet and more complex than pancake syrup. Stirring chills and dilutes the drink so the whiskey stays smooth.

Substitutions

  • Use pure maple syrup, not pancake syrup; grade A dark has more flavor.
  • No smoked whiskey? Use bourbon and smoke the glass.
  • Orange twist and a cherry are both optional.

Questions

Can maple syrup replace sugar in an Old Fashioned?
Yes. Use about ½ oz per drink; it is sweeter by volume than a sugar cube.
What is smoked whiskey?
Whiskey with a smoky character from the grain, the barrel or a finishing process. Peated Scotch is one kind; some American whiskeys are smoked too.
