Ingredient

Maple syrup

Pure maple syrup, used straight from the bottle. It adds a toasty, woody sweetness that suits whiskey.

Ratio

No mixing needed: pure maple syrup is already a syrup.

Method

  1. Use pure maple syrup, not pancake syrup (which is mostly corn syrup and flavoring).
  2. Darker grades have more maple flavor; golden grades are milder.
  3. It is a little richer than simple syrup, so start with slightly less than a recipe calls for and taste.

Shelf life

Refrigerate once opened. It keeps for months; discard it if mold appears.

Notes

  • Maple and smoke are a natural pairing; see the smoked Old Fashioned riffs.
  • Maple works in place of simple syrup in most whiskey sours.
