Rich demerara syrup

A 2:1 syrup made with demerara sugar: richer texture and a caramel, molasses note that suits aged spirits.

Ratio

2 parts demerara sugar to 1 part water, by volume.

Method

  1. Combine the sugar and water in a small pan over low heat.
  2. Stir until the sugar fully dissolves; demerara crystals are large and take a few minutes.
  3. Cool, seal and refrigerate.

Shelf life

Two to three months in the fridge. The higher sugar content keeps it longer than simple syrup.

Notes

  • Because it is twice as sweet, use about two-thirds the amount of simple syrup a recipe calls for.
  • It works well in Old Fashioneds, flips and anything with aged rum or bourbon.
  • Turbinado sugar is a close substitute for demerara.
