Spiced syrup

Simple syrup steeped with warm spices: an easy way to give a classic a fall or winter turn.

Ratio

1 cup simple syrup (1:1) to 1 cinnamon stick, 3 whole cloves and 1 star anise. Allspice berries or a strip of orange peel are optional.

Method

  1. Make simple syrup and bring it just to a simmer.
  2. Add the whole spices, take it off the heat and cover.
  3. Steep 20 to 30 minutes, tasting as it goes; whole spices get bitter if left too long.
  4. Strain, cool and refrigerate.

Shelf life

About two weeks in the fridge.

Notes

  • Use whole spices, not ground; ground spices cloud the syrup and leave grit.
  • A little goes a long way. Start with ¼ oz in a stirred drink.
