Honey syrup

Honey thinned with warm water so it mixes into a cold drink instead of seizing on the ice.

Ratio

1 part honey to 1 part warm water, by volume.

Method

  1. Warm the water (hot from the tap is enough).
  2. Stir in the honey until smooth.
  3. Cool, seal and refrigerate.

Shelf life

About two weeks in the fridge.

Notes

  • Light honeys (clover, orange blossom) keep the drink delicate; darker honeys taste stronger and can take over.
  • Measured 1:1, honey syrup is a little sweeter than simple syrup. Start slightly under the recipe and taste.
  • Straight honey poured over ice hardens into a lump; always thin it first.
